Botulism is a foodborne contaminant that is typically associated with home canning.  Prior to canning, foods should always be handled in a sanitary manner.  Additionally, if the final product does not have the correct level of acidity, there is a greater risk for the contamination to occur.  According to the CDC, approximately 145 cases are reported.  Fifteen percent of that comes from foodborne C. botulism.

Symptoms of C. botulism may include dry mouth, difficulty swallowing, slurred speech or difficulty speaking, muscle weakness, blurred vision, double vision, and drooping eyelids. Symptoms usually appear 12 to 36 hours after consuming C. botulinum toxin; however, symptoms can occur as early as 6 hours or as late as 10 days following the consumption of contaminated food.

C. Botulism can be fatal, and should be treated as a medical emergency. If left untreated, muscle paralysis may progress to the arms, legs, trunk, and respiratory muscles, possibly resulting in death. A patient with severe C. botulism poisoning may require use of a breathing machine and intensive medical care for several months. Patients may experience fatigue and shortness of breath for several years following their recovery from C. botulism poisoning.
